  2. And welcome to our regular lecture on health issues.
  3. The series of lectures is organised by the Students' Union
  4. And is part of the Union's attempt to help you,
  5. The students of this university...
  6. To stay healthy while coping with study
  7. And social life at the same time.
  8. So, it's a great pleasure for me to welcome back Miss Diane
  9. Greenbaum, who is a professional dietician
  10. And who has been kind enough to give up her time in what I know is a very hectic schedule, to come along and talk to us today. Thank you.

  12. May I say it's a pleasure to be back.
  13. Now, stresses at university, being...
  14. Away from home and having to look after yourself,
  15. Learning your way around the campus,
  16. All contribute to making it quite hard sometimes to ensure that your diet is adequate.
  17. So, today, I'm going to talk about ways of making sure
  18. That you eat well while at the same time staying within your budget.
  19. If you have a well-balanced diet,
  20. Then you should be getting all the vitamins that you need for normal daily living.
  21. However, sometimes we think we're eating the right foods,
  22. But the vitamins are escaping, perhaps as a result of cooking,
  23. And anyway, we're not getting the full benefit of them.
  24. Now, if you lack vitamins in any way,
  25. The solution isn't to rush off and take vitamin pills,
  26. Though they can sometimes help.
  27. No, it's far better to look at your diet
  28. And how you prepare your food.
  29. So, what are vitamins?
  30. Well, the dictionary tells us they are food factors essential in small quantities to maintain life.
  31. Now, there are fat-soluble vitamins, which can be stored for quite some time by the body, and there are water-soluble vitamins, which are removed more rapidly from the body.
  32. And so a regular daily intake of these ones is needed.
  33. Okay, so how can you ensure that your diet contains enough of the vitamins you need?
  34. Well, first of all, you may have to establish some new eating habits.
  35. No more chips at the Uli canteen, I'm afraid.
  36. Now, firstly, you must eat a variety of foods.
  37. Then you need to ensure that you eat at least four servings of fruit and vegetables daily.
  38. Now, you'll need to shop two
  39. Or three times a week to make sure that they're fresh
  40. And store your vegetables in the fridge
  41. Or in a cool, dark place.
  42. Now, let's just refresh our memories by looking at the healthy diet pyramid.
  43. Okay, can you all see that? Good.
  44. Well, now, as you see, we've got three levels to our pyramid.
  45. At the top, in the smallest area,
  46. Are the things which we should really be trying to avoid as much as possible.
  47. Things like, yes, sugar, salt, butter, all that sort of thing.
  48. Next, on the middle of our pyramid,
  49. We find the things that we can eat in moderation.
  50. Not too much, though.
  51. And that's where we find milk, lean meat, fish, nuts, eggs.
  52. And then at the bottom of the pyramid are the things
  53. That you can eat lots of, because they're the things that are really good for you.
  54. Here we have bread, vegetables, and fruit.
  55. So, don't lose sight of your healthy diet pyramid
  56. When you do your shopping.
